LAMB CHOPS WITH BARLEY
SALAD AND TOMATO DRESSING
Pearled barley has most o f the bran removed,
so it cooks quickly. IPs still high in fiber, because
not all the bran is removed. Whole grain
(hull-less) barley, with bran intact, requires
longer cooking and has a chewier texture. Find
barley among other grains in the supermarket
or health food store.

cup regular (pearled) barley

medium tomatoes, coarsely chopped

Tbsp. red wine vinegar

cloves garlic, minced

small lamb loin chops, cut i inch thick

cup red sweet pepper strips

1. Prepare barley following package
directions. Drain. Rinse with cold water;
drain. Set aside.

Meanwhile, for tomato vinaigrette, in
blender or food processor combine tomatoes,
vinegar, garlic, cinnamon,

Blend or
process until almost smooth. Blend in olive
oil.
